Sorry it took so long to answer. I've often said that if we could write a book explaining the eccentric behaviors of cats, we'd be trillionaires. If your cat is eating these peelings, she may have a diet deficiency or just be hungry. As potato peelings can get moldy and just plain "nasty" if you don't pick them up, I'd be very careful to peel into a newspaper, then bundle up the peelings and put them in a covered trash container. Discuss her diet and any other odd behaviors with your vet. They may adjust her diet. If you don't already, try spending some playtime with her to distract her from her "thievery"!
