Can a cat choke to death on a hairball?

I would have to say that if the hairball is big enough and compacted enough, it's possible that it could become lodged in the esophagus when the cat tries to bring it up. It's more likely, however, that the cat's intestines will become blocked by excessive accumulation of fur. If your cat has hairball issues, there are preparations at pet stores you can try which look (and unfortunately) taste like Vaseline. There are also hairball formula foods that you can slowly switch her over to. You can help rid her of excess shed fur by brushing her regularly.
