We have done this soup mix just once last year. It was well recieved..
You will need 6 pint size jars and those little resealable snack baggies I mentioned earlier..

Mushroom Barley Soup Mix
1 1/2 C dried lentils
3 C medium pearl barley
1 package of dried shiitake or porcini mushrooms. About 2 Cups..
(we liked the shiitake best)
6 bay leaves
18 beef bouillon cubes
6 tblsp dried celery flakes
6 tblsp dried parsley flakes
6 tblsp dried minced onions
3 tsp course ground pepper
3 tsp garlic salt
3 tsp dried thyme

In 6 pint size jars, layer 1/4 C lentils; 1/2 C barley; 1/3 C mushrooms. Top with a bay leaf.
You also may use decorative plastic containers or cellophane gift bags.
In 6 snack size baggies, place 3 bouillon cubes, 1 tblsp parsley, 1 tblsp celery flakes, 1 tblsp onion, 1/2 tsp pepper, 1/2 tsp garlic salt, and 1/2 tsp thyme; seal bags.
Place 1 in each jar or bag and seal.

To Prepare 1 batch of soup.
Place mix and seasonings in a large sauce pan with 2 quarts of water and 2 medium carrots chopped.
Bring to a boil; stir well. Reduce heat; cover and simmer for 45 to 60 minutes or till barley and lentils are tender. Remove the bay leaf before serving.
