1 8 in round Brie 2 lbs
( if you cant find that size, you may use 4 8 oz rounds of brie, dividing the topping evenly among the 4 rounds and microwave 2 at a time on high 1 1/2 minutes.)
3/4 cup dried cranberries or sweetened dried cranberries
3/4 Cup chopped pecans
3 tbls brown sugar
1/4 Cup honey

Trim the rind from Brie, leaving a 1/2 inch border.
Place Brie on microwave safe plate.
Combine cranberries, pecans and sugar; sprinkle over Brie. Drizzle with honey. Cover and chill till ready to heat.
Microwave HIGH 1 1/2 minutes to 2 minutes or until Brie is softened.
Serve with crackers and pear slices.

These tasty gems also make wonderful gifts. Wrap them in decorative plastic wrap, tie up with ribbon, place in a basket, along with recipe card of your creation! I also include a mix for hot chocolate, a Christmas mug and spoon, snuggled in the basket with these cookies.
No Bake Peanut Butter Cookies
2 Cups sugar
1/4 Cup cocoa powder
1/2 Cup butter
1/2 Cup milk
1/2 tsp vanilla extract
1/2 Cup creamy peanut butter or crunchy
3 Cups uncooked quick cooking oats
Combine first 5 ingredients in a medium saucepan. Cook over low heat till butter melts, stirring occaisionally. Increase heat to medium; bring to boil. Boil 1 minute. Remove from heat; quickly stir in peanut butter until smooth. Stir in oats. Quickly drop by heaping tablespoonfuls onto wax paper. Let cool completly. Carefully remove from wax paper. Store in airtight container till you wrap up for gifts or eat them. They do not last long around here..MOL..

My cousin learned how to make them in Junior High and gave me the recipe and I have been making them ever since . (Years ago). Now my girls make them. They are very quick and easy. |  |  |  |  |

(makes 17 cups of Mix)
1 - 25.6 oz box instant milk (Carnation)
1 - 6 oz. jar of instant creamer (Coffee Mate, Etc.)
2 - cups 10x sugar (powered sugar)
1 - 16 oz can of Nestle Quik
Mix together and keep in a sealed container.
To use: 3 Tablespoons of mix per cup of milk or water.
Can also be packaged for gifts. Put in seal able containers, add directions, tie with a colorful bow and add a bag of marshmallow.
We used this recipe for 4-H, Scouts, Church groups. |  |  |  |  |

Makes 8 cups of mix
Bake at: 250 degrees.
Time: 45 minutes Stirring every 15 minutes.
Ingredients:
6 - tablespoons butter (Do Not Use Margarine)
3/8 - teaspoon garlic powder
6 - cups Chex Cereals ( Wheat, Corn, and Rice) or whatever
cereals you like.
1 - jar of Dry Roasted Peanuts
1 - bag or box of Pretzels
1 - bag or box of Cheese Its
Pour melted butter into shallow baking pan. Stir in garlic powder. Add Checks and Nuts, Cheese its, and the pretzels.
Heat in 250 degree oven for 45 minutes. Stirring every 15 minutes.
Can be given as gifts or just eat it yourself. |  |  |  |  |

This is a tasty bean and cheese dip we make for Christmas eve..
Chef Rooster's Get It While It Is Hot Dip
1 can refried beans with jalapenos
1/2 c shredded mozzarella cheese
1/2 c shredded Colby jack cheese
2 tblsp butter/margarine
2 tbls finely chopped onion
1 garlic clove minced
2 or 3 tsp chili powder
several dashes hot pepper sauce (we love tobasco)
In sauce pan melt butter; add beans, onion, garlic, chili powder, hot pepper sauce and cheeses. Cook over low heat till cheeses are melted and dip is heated thru. Serve with tortilla chips. We keep this dip warm in a mini crock pot. Just remember to grease mini crock with Pam to keep from sticking! |  |  |  |  |

Tate, The Cuppycake King 's Christmas Cuppycakes!
2 3 oz packages of cream cheese, softened
1/2 C sugar
1 large egg
1 C (6 oz) milk chocolate morsels OR the red and green, white chocolate morsals if you can find them...Target for sure carries them.
1 package swiss chocolate or devil foods cake mix..Chef likes Duncan Hines
1 16 oz container homestyle creamy vanilla frosting
1 16 oz container chocolate fudge frosting
Decorator sprinkles..Christmas themed..plus green and red sugars
Beat cream cheese at medium speed with mixer till smooth; add sugar beating well; add egg beating till just blended. Stir in chocolate or colored morsels.
Prepare cake mix according to package directions. Place baking cups in muffin tins, spray baking cups with cooking spray. Spoon batter into cups 2/3 full.
Spoon a SCANT tablespoon of cream cheese filling mix in center of each cuppy cake. Bake at 350 for 19 to 21 minutes or till toothpick inserted OFF CENTER comes out clean. Cool pans on wire rack 5 minutes. Remove from pans and cool completely.
Frost cuppycakes. We like to use half chocolate and half vanilla on each cuppycake and kinda swirl together. Or just frost as you like..Top with Christmas decorator sprinkles..make abour 2 1/2 dozen cuppycakes! |  |  |  |  |
