CHICKEN QUESADILLA

4 large tortilla
1 chicken breast
Salt and pepper
Garlic powder
Olive oil

Salsa

1 ripe avocado, chopped
1/2 TBSP canned chopped Jalapeno
2/3 cup chopped onions
2 cups chopped tomatoes
1/2 cup chopped cilantro
¼ tsp. salt

1 bag of shredded part skim Mozarella Cheese

Season chicken breast with salt, pepper, garlic powder and olive oil. Grill or bake and chop into small pieces.

In a bowl, make salsa by mixing avocado, canned Jalapeno, onions, tomatoes, cilantro and salt. Reserve about 1/2 of the salsa mixture.

In skillet, place on half of tortilla the mozzarella cheese, chicken, salsa, and again with cheese. On medium heat, fold tortilla over and press until bottom is brown. Flip over and press again until bottom is brown. Cut in wedges and serve with the reserved salsa.

* You can also substitute the chicken breast with shrimp. Season the shrimp and grill or saute with some olive oil and chop into small pieces.

** If you want more spicy, add chili powder when seasoning chicken and freshly chopped Jalapeno to salsa.

Hi Kobe, We tried this recipe tonight for dinner. I thought Quesadillas were hard to make but this was very easy. They were delicious. We will have these again. Next time we might try with shrimp or steak. Way to go and Thanks for sharing your recipe.

Kibbles. You can do the steak with saute Portobello mushroom, bell peppers and onions. Yum! way to go
