I will post a recipe here 3 times a week, main dishes, veggies, soups/stews, desserts, misc.

If you want more, go to SOMC Forum, OffTopic, Cooking with Cuddles. I will try to post daily there. I hope every enjoys these recipes, and please, let me know what's good or bad, and what you would like me to try to post for you.

Special Sneak Preview!

Stuffed Pork Casserole

Slice 3# pork tenderloin (unflavored) in 1/2" slices.
Spread in greased 13x9 pan.
Mix 2 cans cream of chicken soup, 14.5 oz can chicken broth and
3/4c Miracle Whip.
Heat warm and pour over meat.
Fix 8 oz pkg chicken stuffing mix per pkg and spoon over meat.
Bake 45 min # 350

This could be cut in half, using half the tenderloin, 1 can soup and 1/2 can of broth. Half of stuffing could be set aside for another meal.

Mon 8-17-09 CAT LITTER CASSEROLE

Mix 1 c Bisquick, 1 c grated cheddar cheese, and 1 # hamburger. Form into "cat turds". Lay in 13 x 9, not touching, and bake 20 min.
Combine 2 c long grain rice, 3 3/4 c water, 2 t salt and 2 T margarine.
Bring to boil, then cover & simmer 14 min. Fluff with fork.
Drain turds on paper towels, then spoon with litter into serving dish.
Leave some turds only partially covered.

Serve to people with a sense of humor!! I would probably add some chicken bouillon granules to the rice water, and some sort of spices to the turds. Use your imagination...

Weds 8-19-09 CHICKEN ON THE NEST

Make creamed chicken.(Mix chopped cooked chicken, minced onion, 1 c mixed cooked vegetables, and a can of cream of chicken soup. Warm to serving temp.

Fix a box of chicken stuffing mix per pkg. Grease custard cups. Press stuffing into and up sides of cups. Set on Cookie sheet. Bake 15 min @ 400.

Fill cups.

This is good with a cottage cheese-fruit salad mix.

Friday 8-21-09 LEMONADE CHICKEN

Combine 12 oz can frozen lemonade mix, thawed; 2 T brown sugar; 2 T soy sauce; 1 t garlic powder'
Divide in 2 portions. Chill one separately, combine half with 6 bone-iin chicken boobals in plastic bag. Turn occasionally to coat. Marinate in fridge 8 hr.
Drain marinade and discard.
Grill chicken 20-30 min. Serve with heated mix on the side.


ANGEL HAIR PANCAKES

Cook, drain and chill 1/4 # angel hair pastea. Combine 1 beaten egg, 1/4 c parmesan, 1/4 c cooked peas and salt/pepper. Add pasta by hand and mix gently. Let stand at room temp 1 hr.
Heat 1 T olive oil. Add 1 c pasta mix and flatten.
Cook 3 min each side, Repeat for second cake.
Cut each in 4 wedges. Serve with sour cream/ranch dressing.

Add a mixed fruit salad.

COKED PORK CHOPS

Lay 6 chops in 13 x 9 and season.
Mix 1 c catsup and 1c coke.
Pour over chops.
Top with 2-4T brown sugar.
Bake 1 hour


MILWAUKEE'S BEST PORK CHOPS

Brown 6 chops.
Combine 1/2 c beer, 1/2 c catsup and 2 T brown sugar.
Pour over chops.
Cover and simimer 1-1 1/2 hr.


Excellent with baked potatoes or french fries, corn on the cob, and fresh garden salad...
