Mom made stew yesterday with beef. She browned & seasoned the beef in oil & poured a cup of coffee in the pan to loosen the bits. She then put it over into the crock pot & added a whole can of light beer! She cooked it several hours before adding the potatoes, carrots, celery & onions.

OMD! That made the best broth! applause

Mom's been craving chocolate lately. This recipes help.

Chocolate Chip Cookie Brownies

For the cookie base
1 1/2 cups flour
1/4 cup sugar
pinch salt
1/2 cup butter
1 egg, lightly whisked
1 tsp vanilla
1 cup chocolate chips

For the brownie layer
1 cup flour
1 cup sugar
1 tbsp cocoa
1/2 tsp salt
1/2 cup butter
8 oz 70% dark chocolate, chopped
2 eggs
1 tbsp vanilla
1 cup chocolate chips

For the cookie base
1. Put flour, sugar, salt and butter into a medium bowl and mash the mixture until it's crumbly. Whisk the egg with the vanilla and stir in along with the chocolate chips. Continue stirring until a dough comes together. Press into a lightly oiled parchment-lined, 8 by 8 baking dish.
2. For an extra crispy cookie-like base, pre-bake the cookie dough for 15 minutes. If you prefer a softer base layer don't pre-bake. Either way will support the brownie layer.

For the brownie layer
1. Preheat your oven to 350 F.
2. Whisk the flour, sugar, cocoa and salt together. Meanwhile melt the butter over low heat. Turn off heat and add the chocolate.
3. Stir gently with a whisk as the chocolate melts then whisk the mixture smooth. In a second bowl whisk the eggs with the vanilla. Scrape and discard the whisk. Add the wet ingredients to the dry ingredients. Add the chocolate chips and mix well with a wooden spoon or the like.
4. Pour the batter over the baked or un-baked chocolate chip cookie base and bake for 45 minutes, until a toothpick comes out clean when inserted into the centre of the brownie.

Mom has to say this,
She fixed the Irish Stew 2 times this week and the it was good and yummy both times way to gocheer
The broth was so rich, it was unbelievable cheer

The Colcannon was the bomb too way to go
Dad even commented on how tasty it was and had more then his share wink
Mom made it with beef both times smile
