If we pooped, it probably would have froze before it hit the ground eek It is -20 below with a wind chill factor and now it is only 5 degrees eek Brrrrrrrrrr Brrrrrrrrrr shock

Eggless Pumpkin Cookies

1 cup canned pumpkin
1 cup water
4 tablepoons vegetable oil
1 teaspoon ground cinnamon
1 1/2 cup oatmeal
3 1/2 cups of oat flour (grind oats until flour consistency)


Step1
Preheat oven 375.

Step2
Combine all ingredients, except for flour. Add flour 1/2 cup at a time kneading dough. I find my hands work best. Keeping the Flour in a bowl to the side adding a handful at a time or a 1/2 cup if measured.

Step3
Keep kneading dough until the consistency is that of a normal cookie dough.

Step4
Roll dough out on wheat floured surface with a rolling pin. 1/3 to 1/4" thick.

Step5
Cut with seasonal cookie cutters or knife

Step6
Place on cookie sheet ungreased. Little to no spacing is needed. Bake for 40 minutes. Cookies will move with a slight touch on cookie sheet when done.

Step7
Place hot cookies on a cooling surface, like a towel. Let cool completely. Store in tightly closed container for a week or in the fridge for a month.

You can frost with cream cheese frosting if desired but must be kept in fridge.

Dog friendly Cream Cheese frosting

8 oz cream cheese (use the lowfat variety)
2 tbsp. plain fat-free yogurt
1 tbsp. honey
1 tbsp peanut butter (optional)

cream all ingredients together and use as a frosting on dog cookies and cakes.

Carob Chip Bundt Cake

This is a darker, richer, peanut flavored cake with carob chips and carob drizzled on top. A beautiful cake that serves 16-20 dogs, if you're having a bigger party.

* 1 cup whole wheat flour
* 1 teaspoon baking soda
* 1/4 cup peanut butter
* 1/4 cup butter, melted
* 1/3 cup honey (optional)
* 1 egg
* 1/2 cup carob chips (carob is a chocolate substitute)*

Mix the dry ingredients. Add the remaining ingredients and mix quickly. Bake in a greased ring mold at 350° for 40 minutes. Drizzle melted carob over cake when cooled. Store in the refrigerator.

* Do not use chocolate chips. If you cannot find carob chips, make the cake with white chocolate chips instead (white chocolate is NOT chocolate, it's vanilla flavored).

*Mom is going to use oat flour instead of wheat,coconut oil instead of butter and molassas instead of honey ( you shouldn't heat honey)

Italian Hazelnut Cookies

These crispy cookies are made with Piedmontese staples—hazelnuts and eggs—and called Brutti Ma Buoni: literally, "Ugly But Good." But they are really more plain-looking than "ugly," and pack a powerful, sweet, nutty burst of flavor, making them welcome at any table.

Ingredients

2 cup(s) hazelnuts, toasted and skinned (see Tip)
1 1/4 cup(s) sugar
4 large egg whites
1/2 teaspoon(s) salt
1 teaspoon(s) vanilla extract

Directions

1. Position 2 racks as close to the center of the oven as possible; preheat to 325°F. Line 2 baking sheets with parchment paper or nonstick baking mats.
2. Pulse nuts and sugar in a food processor until finely ground. Scrape into a large bowl.
3. Beat egg whites and salt in another large bowl with an electric mixer on high speed until stiff peaks form. Using a rubber spatula, gently fold the egg whites into the nut mixture. Add vanilla and gently but thoroughly mix until combined.
4. Drop the batter by the tablespoonful 2 inches apart on the prepared baking sheets.
5. Bake the cookies until golden brown, switching the pans back to front and top to bottom halfway through, 25 to 30 minutes. Let cool on the baking sheets for 5 minutes. Gently transfer the cookies to a wire rack to cool completely. When the baking sheets are thoroughly cooled, repeat with the remaining batter.
6. Tip: Toast whole hazelnuts on a baking sheet in a 350°F oven, stirring occasionally, until fragrant, 7 to 9 minutes. Let the nuts cool for a few minutes, then rub together in a clean kitchen towel to remove most of the papery skins.

These sounded really good with a cup of hot tea mom thinks so any way big grin
