It cooks in the crock pot. Moist and it is a meal in itself. My Lady has to make another batch the next day as our family loves this dressing! She uses some of the left over SMOKED turkey from Thanksgiving dinner, along with cooked chicken..
You will need to boil 4 chicken breasts in 2 cups water and 2 cans of broth . Cool and cut into cubes reserving broth. You will need about 3 1/2 cups of this tasty liquid.
Cook a batch of cornbread and cool and crumble. You will also need a box of man made stuffing of the bread crumb variety, or 8 slices of day old bread dried and crumbled. My clever claws make short work of that!
1 stick of butter
1 cup each chopped onions and celery or more to your taste
1 can mushroom soup 1 can chicken soup each
1 or 2 eggs ( My Lady uses 1 large )
1 tsp. poultry season
2 tsp sage or more to your taste.
1 tsp thyme (a delightful herb)
1/2 tsp pepper
Melt butter in skillet and saute your onions and celery till done. Then in a large bowl mix all of the above, REMEMBER ADD Chicken LAST and toss well, do not squish it flat please, if you humans only had our clever little paws, and pack lightly, no squishing, think clever paws here, into a crock pot you have greased all sides of. You may add more broth if it appears a bit dry. You will dot the top of this with a few paws, for humans, pats of butter. Cook on low 5 to 6 hours. The wonderful aroma as it cooks will have you drooling, so keep a towel handy. |  |  |  |  |

It just isn't Thanksgiving without pumpkin pie and since the pawrents grew their own pumpkins this year, Meowma can now use her old recipe for fresh pumpkin pie. Here tis!
Homemade Fresh Pumpkin Pie
2 cups mashed, cooked pumpkin
1 can (12 oz) evaporated milk (not sweetened condensed!)
2 large eggs, beaten
3/4 cup packed brown sugar
1/2 teaspoon (or more) ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Crust for single crust pies (your own or pre-made)
Preheat oven to 400 degrees F.
Halve the pumpkin and scoop out seeds and stringy portions. Cut pumpkin into chunks. In saucepan over medium heat, in 1 inch of boiling water, heat the pumpkin to a boil. Reduce heat to low, cover and simmer for 30 minutes or until tender. Drain, cool and remove peel.
Return pumkin to the saucepan and mash with a potato masher. Drain well.
Put pie crust into pans.
In a large bowl with mixer speed on medium, beat pumpkin with evaporated milk, eggs brown sugar, cinnamon, ginger, nutmeg and salt. Mix well. Pour into a prepared crust. Bake 40 minutes or until a knife inserted 1 inch from the edge comes out clean.
This recipe should make two 8-9 inch pies.

| Purred: Mon Nov 2, '09 12:30pm PST | |  |  |  |  | I have one more traditional Thanksgiving addition to put in here. Meowma never measures anything in this so she says everything is approximate and please feel free to add or subtract what you'd like in this recipe.
Sweet Potato Balls
4-6 medium sweet potatoes (depending on how many you are serving-we use 4)
12 large marshmallows
2 cups or more crushed cornflakes
3/4 cup brown sugar (dark brown adds more flavor)
1/2 stick butter, no substitutions or it will taste greasy
Wash and cook sweet potatoes, skin on, till tender. Time can vary depending on size and if you cut them or not. When done, take out of pan and let cool to room temperature as this makes them much easier to handle and won't be hot or cold. Peel and mash well. Set aside and ready the other parts.
Preheat oven to 350 degrees F. Spray a 9 x 13 inch oblong pan with cooking spray. Open up your marshmallows or have them on a plate as it's no fun to take them out of the package when your hands are covered with mashed sweet potatoes MOL! Crush the cornflakes in a Ziploc bag with a rolling pin. Doesn't need to be too finely crushed but fairly small. Put in a bowl so you can roll the balls in them. Measure out your brown sugar and cut up the cold butter into small pieces to top the balls with. Now you're set to put it all together.
Put about a 3 inch ball of mashed sweet potatoes in the palm of your hand. Put a hollowed out area in the middle and put a marshmallow inside. Bring up the sides and if needed add a bit more sweet potato to the top to seal it up. Roll this in the cornflake crumbs. Put into your sprayed pan and keep doing the steps above till all your potatoes are gone.
Sprinkle the brown sugar over the top of the balls and dot with the butter. Cover with aluminum foil and put in preheated oven for 40 minutes. Uncover pan and let cook for 10-20 minutes longer or until they almost burst open.
This should feed a family of four well. Very flavorful and filling. I hope everyone enjoys them, they're worth the cook time! |  |  |  |  |

Gingersnap Sweet Potatoes
6 sweet potatoes about 4 lbs
1/2 C firmly packed brown sugar
1/2 C butter, melted
1/3 C half n half
2 large eggs
1 tsp vanilla extract
1/2 C firmly packed brown sugar (yes another)
2 Tbls flour
1/4 C cold butter cut into pieces
32 coarsely crushed gingersnaps cookies
Cook sweet taters in boiling water on med heat 30 minutes or till tender.
Cool, peel and mash..Yes you may use canned, but fresh is better here.
Combine the mashed sweet taters, 1/2 C brown sugar and next 4 ingredients following the first brown sugar, in a mixing bowl; beat at medium speed with electric mixer till smooth.
Spoon into a greased 13 x 9 baking dish. Or a 2 1/2 quart baking dish if you prefer..
Combine the remaining 1/2 C brown sugar with the flour. Cut in the butter with a pastry blender till crumbly. Stir in gingersnaps. Sprinkle this streusel over the taters. Bake uncovered at 350 for 25 minutes or until streusel is lightly browned. |  |  |  |  |

(Sweet and Sour Red Beets)
1/2 cup sugar
1 teaspoon salt
1 tablespoon cornstarch
1/4 cup vinegar
1/4 cup water
3 cups red beets, canned or fresh cooked
2 tablespoon butter
Mix together the dry ingredients. Add vinegar and water and stir until smooth. Cook 5 minutes. Add beets and let stand 30 minutes. Before serving, heat to boiling pint and add butter. |  |  |  |  |

| Purred: Mon Nov 23, '09 9:24pm PST | |  |  |  |  | Roasted Fresh Sweet Potatoes With Honey Mixed With Sauteed Apples & Pecans
For 4 or 6 purrsons
5 nice Yams (fresh not canned )and peel them and cut into squares. Then put on a baking sheet in the oven at 375 for 45 minutes. Check them, you wanna have them not mushy! But kind of "al dente" style
Get 2 firm apples not mushy kind and not too sweet and not too tart - peel and core and cut them in pieces then saute in some butter till kind of cooked . Do not overcook
Get 1/2 lb of pecans (pieces or whole) and saute them in some butter - nicely sauteed till brown
Now get a baking dish and grease it up and mix in the chunks of sweet potatoes with the kinda cooked apples and then nicely fold in the sauteed pecans. Now drizzle all over the top a bunch of melted butter with a 1/2 cup of honey. Maybe 3/4 stick of butter melted is good.
If you wanna make it really purrty - then add a 1/2 cup of dried cranberries - nice red touch.
Bake in the oven 365 degrees for 40 min - keep looking in da oven as ya don't wanna have the dish turning black. |  |  |  |  |
