½ Boneless, skinless chicken breast cutlet
2 Extra large shrimp
2 Tbs Cream Cheese
1 cup chicken broth or stock
1 hand full parsley
Poach chicken in broth with parsley. Cool. Dice.
Beat chicken and shrimp into eggs. Spray frying pan with butter flavored Pam. Cook on low heat until almost done. Add bits of cream cheese. Flip to fold in half. Continue cooking until cheese melts.
Cool down to room temp before serving.
Add sliced onions, mushrooms, and peppers. Salt and pepper to taste. Serve warm.
