You didn't say how long he has been with you. But as long as he comes out to eat, drink and go potty, I would not be too worried. Just give him time to get used to his new home and his new people. Keep things calm and quiet around him. Sit on the floor nearby and be patient with him. Let him come to you. Do not force him to come out. Try encouraging him to come out to play with toys like feathers on a stick where he won't have to get too close unless he wants to. Offer him treats. He is young so he should adapt quickly. As long as he was not feral, this is probably just temporary. If he was a feral rescue, please repost and ask for assistance from people who know how to socialize feral cats.

Cats are naturally very territorial and not very fond of drastic change. Even the most adaptable cats will take at least a week to be totally their normal selves when moved to a new environment with different people and animals. It's not at all uncommon for some cats to take a few months to accept a new life and really open up and be themselves.
If possible keep him in his favorite bedroom until he is comfortable enough to come out for you and stops hiding under the bed. He'll have an easier time getting used to the smaller space and when he gets run of the house that will be his safety zone. Follow Allie's tips for bonding and try to use good kitty body language- if you make eye contact with him slowly blink your eyes and try not to yell or make sudden big gestures around him. Assuming he's not feral (they should have told you if that was the case) he is probably just a shy, loyal cat who needs time to decide you're his new special, trusted person and this is his new safe home!
